Vegan Baking

I've been vegetarian for years now and use very little dairy produce apart from cheese (which I would find really hard to give up). Although I'm not quite ready to commit to being fully vegan I would like to stop eating eggs (those little boy chicks being gassed did it for me). I can live without omelettes, scrambled eggs etc but I do like to bake. Any vegans out there who can tell me what its like baking cakes etc without eggs? Advice appreciated.

I've made vegan chocolate buns before, and the mixture was really runny, and I thought it would never work, but it did. The tasted a bit different, but pleasant. Also they tend to be drier, but a bit of icing would solve that.

This is my favourite vegan baking book. It's for cupcakes but it's easy enough to increase the quantities to make a bigger cake. I have had some trials and errors with vegan baking and this book is the best I've tried. Lovely light cakes!
