I love pate of any description - particularly nice with fresh crusty bread and some nice onion relish

I love it too. I don't think I have found one I don't like but any with garlic are an instant winner for me. I prefer course over smooth as well, but both are good.

I made some yesterday - just smoked mackerel and cream cheese 50-50 blitzed in the food processor; leave it to chill for a couple of hours.

Over Christmas M&S did a gorgeous duck liver with truffle pate, which was really smooth and possibly the most gorgeous shop bought pate I've ever tasted.

Waitrose wold mushroom pate is fantastic too. Haven't been able to bring myself to have meat pate as when I was a kid I HATED liver and a lot of them are made from livers. But have discovered recently that I'm liking more and more food that I hated as a kid. Will start with a smoked mackeral pate as I LOVE fish. Then see how brave I get...

Mackerel pate here!

We smoked our own mackerel last year and this year I'm going to try and make pate with it...anyone got a great mackerel pate recipe?
Ingredients: Serves 4
250g ready to use smoked mackerel
150ml sour cream
2 teaspoons of fresh chopped coriander
2 teaspoons of fresh parsley
Half a hot green pepper finely chopped (without seeds)
1 large garlic clove finely chopped
Fresh ground pepper and sea salt to taste
1 teaspoon of fresh lemon juice

Method:

1. Simply flake the Mackerel into small pieces in a mixing bowl with a fork or your hands.

2. Mix with the remaining ingredients, the mixture will be soft but will firm up if kept somewhere cool for a short while.

3. Serve with bread, toast or crisp bread

I like this one as it's so simple. And delicious of course!

Why can't you have pate when pregnant? My sister ate her own homemade chicken liver pate through all four of her pregnancies?

I reckon you can smash up almost any sensible combination of ingredients in a food processor and make a lovely pate.
I was in a restaurant in Florida once, and they had a recipe printed on the doggie bag. You took away the steak, baked potato and salad that you couldn't eat, and the recipe said to just blitz it all together, then look at the consistency. If it's quite stiff, eat it as pate. If it's runny, add a bit of stock and have it as soup. I was in a hotel with no cooking facilities so I couldn't try this, but it sounds good to me.

Waitrose do a FANTASTIC wild mushroom pate. So if you fancied making a mushroon pate then try wild mushies to make it even more tasty.
