Ideas for an interesting omlette!

Hi,

Have a lot of eggs in the fridge and though of making omlettes tonight. Does anyone know of any good fillings?

I don't eat meat, but do like veggie sausages and Quorn, so all ideas gratefully received!

chopped spring onions, a little tabasco and cheese?

well I dont think you can beat a good mushroom and cheese ommelette to be honest.

But why not try a spanish omelette?

fry sliced potatoes slowly in olive oil until cooked and soft, drain off the oil add beaten eggs, onion and frozen peas , salt and pepper to taste, ( you can add diced carrotts and/or sweetcorn as well), cook over a low heat until solid, then top with grated cheese ( if you eat cheese) then pop under the grill to brown it off

not a traditional spanish omelette but gowes down well in my house with a side salad.

Also, try Huevos Rancheros - it's basically mexican scrambled eggs, and there's lots of different receipes if you google. Pick the one you like the sound of best!

Another version of spanish omlette (this is canarian recipe rather than mainland) -

Parboil potatoes and cut into small pieces. Beat eggs, crushed clove of garlic and some spinach together, put the potatoes in and pour into a shallow pan and cook slowly until on a hob or in an oven until the eggs are set and cooked through. Serves with a big dollop of mayo (not hellmans!!!) and some salad. yummy.

Smoked fish, especially if you separate the eggs, beat the whites and fold the yolks back in before you cook it. Goes like souffle in the pan.
