Succotash

Made succotash last night for the first time - think I was inspired my someone making a version of it on Masterchef the other night - anyway it was delicious. I made it with the traditional vegetables of onion, pepper, squash, corn and broad beans. Has anyone ever made it with other vegetable combinations?

There is a food stuff called succotash? Wow, I thought it was a made up word that Sylvester used to say in the Looney Tunes cartoons!

I've been making my own non authentic version for a while! I use leeks, sweetcorn, potatoes (small pieces to add bulk more than anything), green pepper, mushrooms, butter beans, some stock and sour cream and chilli. I love it! It goes well with roast potatoes.

Succotash is something I never even realised was edible - I thought it was some small furry critter. (Well, I suppose that is edible to some people.)

I'd never heard of it with tomatoes in! But then, as I said, mine isn't authentic. I expect there's hundreds of versions.

Indeed!

Yes, the sour cream and the chilli go very well. It's just a fry and stir dish, so very easy too!
