My mashed potato tip: mash them up with spoonful of pesto and a bit of grated parmesan.

The best is when you bake the sweet potato as you would a regular potato (rubbed with oil and poked, NO FOIL!). The inside almost mashes itself with all the flavour left inside. Once done, cut the end off the sweet potato and squeeze the potato out of its shell. Absolutely gorgeous!

If you would like more sweetness like the type of sweet potato in the states (served on Thanksgiving), add a couple tablespoons of soft brown sugar and mix into the potato mash, put into a buttered casserole dish, top with a few dabs of butter and bake for another 15-20 minutes....YUM!! only if you like 'sweet' potatoes though. A lot of people also put mini marshmallows on top that melt in the oven, but I think that is just a bit too sweet.
Note: If you are watching calories or on a diet I suggest you don’t make the Thanksgiving version. It’s a once a year treat!

I do love a normal sweet potato with a little butter like a jacket potato and I have salt on it as well (all bad I know). I also love to eat the skin of the potato white or sweet. However I don't like all the sweetness of the brown sugar and marshmallows. It's okay once year, but no more that that.

Thanks for all your tips. I tried it last night, I didnt put anything with it though, as I'm doing Rosemary Conley diet and it didnt say whether to add butter or anything to it. Tastes like mashed carrots lol, but was nice. Nothing beats good ol' normal mash tho, but it will do!

Wasn't there something in the papers the other day about a number of cows that were killed by being fed sweet potatoes?

well if there was I suggest it had more to do with the cows eating too many, ( like horses and colic) than the actual sweet potatos themselves I haven't managed to kill my kids yet.
