REmake is just hauntingly gorgeous graphics wise. Has a vibe of "classic horror film" to it, and it's enough to scare you silly. Especially considering the changes they made from the original version.

Yeah well said! Nemesis is great because it adds an element of unpredictability and paranoia. When I first played RE3 back in the day on PS1 I played through it first on Easy and thought it was a good game, a worthy sequel but nothing particularly special, which was pretty much how I felt about the whole series at that point.
It wasn't until I played on Hard that I realised the whole point of Resident Evil. I'm almost embarrassed to admit that as I'd played through both RE games before on the easy/normal difficulties and while they weren't quite a forgiving as Nemesis I still missed out on a lot of fun. RE3 is a true test of survival, and was such an eye opening experience playing through it the first time on hard, almost a completely different game.
And yes, there's something about the GC version I also love, I've heard that said a number of times now from various people, I think the controller is so well suited to the games which plays a part in it.
REmake is on another level yeah, it's really is the magnum opus of the series before they went 3rd person. I love both styles and I've also really grown to love Resi 5 too but REmake for my money cannot be beaten on a number of levels.
