need some stew advice
ok for the first time i have tried to make a fish stew
i put in it - prawns - from frozen smoked and white fish - from frozen water white wine butter mixed herbs tins tomatoes tomato puree fish stock from cube it is cooking and smells good but i just looked at it and it seems very watery. how can i thicken up the body a bit? vegetable gravy powder?or would that be horrible?what else could i use? |

Add some plain flour or cornflour to thicken it. It's probably watery due to the the fish being frozen

I'd agree, add a bit of cornflour. Or add a couple of chopped up potatoes, they will absorb quite a bit of water. Also cook it with the lid off for a bit, and let some of the water evaporate.

I would add either flour and butter mixed together, or cornflour. Don't cook the fish for too long or it will spoil.

probrably too late now, but for next time, drain off the liquid ( so the fish doesn't over cook) put 1/2 to 1 teaspoon of cornflour in a cup add drips of cold water till you get a smooth paste add a bit more water and then add slowly to the liquid until all stirred in, simmer till it thickens a little and then add back in the fish and stuff. |

Thanks fo your replies, it wasnt too late as i was cooking it very slowly in the slow cooker - i am going to cook it overnight like i do with the meat - but as it is fish and you have warned me not to overcook it, i will do it on low, not on high like usual - im expecting the liquid to reduce a bit and thicken by the morning, with the cornflour in it - i will let you know how it turns out in the morning!

For next time, you could coat the fish with seasoned flour first - that would thicken it nicely.

sbba - i shall try it next time.
unfortunatley even after adding cornflour and cooking all night in the slow cooker it still did not go together.Instead of a stew, in the end i had to liquidise it and make a thick fish soup.It was still very nice. Therefor e if making fish stew with frozen produce, i would say dont add water till it is cooked, if at all. |
