Egg Yolks
I'm making cupcakes (coconut and raspberry) that have taken five egg whites in the recipe. I now have five egg yolks in a bowl, at a loose end.
What can I make with egg yolks, other than a very yellow omelette? Does anyone have any ideas please? |

Thank you. I may try the ice cream idea actually. I'm really not keen on creme brulee, but maybe that's because I've never made it, so maybe I should try. I'll have a think and do something tomorrow.

Egg whites freeze quite happily so you can decide at your leisure.
Friands are lovely and very easy. I like to put sliced plums on top before they go in the oven. www.waitrose.com/recipe/Basic_Friands.aspx |

![]() ![]() Sorry, I read that the wrong way - well, it is late! Do try the friands though. You can make and egg yolk sponge or how about lemon curd which is always handy for fillings. |

Slightly off topic but has anyone noticed that some egg yolks are really pale these days?

Artificially enhancing the yolk through additives fed to the hen I think is now banned. |
