make sure to remove any green bits from the actual tatty then treat as normal

Good questions. I was wondering the same thing.

I get given for free big sacks of spuds. I use them as quick as i can, but they do sprout. I still use them, cutting the ends off - but they look like something out of Dr. Who.

If you put an apple in the sack they keep for longer before they start to sprout.

As long as the potato is firm, it should be fine to eat. If it feels like it is soft, I usually ditch them.....eyes (sprouting) and all!

The green parts are an indication of increased levels of solanine, a poisonous alkaloid. However, not being an expert, I really haven't any idea how dangerous potatoes can become.

Yeah they're fine to eat. As long as they haven't gone soft.

You could always grow your own potatoes when they have roots on them like that. I did that one year & they were lovely. I did the same with garlic too.
