I love making pancakes - I think it was the first thing I learnt to cook from scratch myself. I remember watching Peter Duncan making them on Blue Peter and insisting on being allowed to have a go, and I made them all by myself without any help. They're the easiest thing in the world to make, and I never measure or weigh the ingredients, just keep adding flour and milk to the eggs til it gets to the consistency I want. I dread to think what's in the packet mixes - partially hydrogenated stuff, emulsifiers, lecithin (whatever that is), E numbers... none of it necessary.

I have followed Delia's pancake receipie for the past twenty years and never had a bad one.

I like mine filled with ice cream and black cherries. Every pancake day we say " We should have these more often"! but we never do

I never undesrstand why people buy ready pancake mix.
If you buy it you usually have to add milk in any case

All you need to make pancakes is flour, egg, and milk.

Therefore all shop-bought pancake mix contains is flour and egg-powder!!
In other words, very expensive flour!

Friend of mine (a chef) once told me a very simple recipe:

to one egg use three tablespoons of flour (or 2,5 for less floury taste)

add a pinch of salt for both savoury and sweet pancakes; add a little sugar for sweet ones

add milk to to make the mixture liquid

add a little sparkling water to make the pancakes go really fluffy

really easy!

I love pancakes and make my own easy peasy
(makes 12)
100g white flour
1 egg
150ml milk
150ml water
1 teaspoon olive oil for greasing the pan

I do mine by eye, this is a recipe I pulled off a site I normally use for straight forward recipes

I normally eat about 6 I am a pig

I want to have a crepe! (why does that sound rude?)

What the difference anyway? Not keen on traditional thick pancakes..they go all gloopy in my gob...but savory French crepes with ham and cheese....mmmmmmmmmmmm

I was in Stranraer..what are pikelets? Erm...like griddlescones...i.e tiny , thick pancakes with jam/fruit and cream:
