I forgot it was Shrove Tuesday today! Will have to go get some milk on the way home - I have got everything else and only have a bit of sugar and lemon on them.

Why do people buy the mix? Same with yorkie pudding mix, just make it from scratch! Just as easy and A LOT cheaper.

I love pancakes but can never be bothered. i always flip them wrong and can't just turn them over. so unless there's someone else there i won't have them.

I thought I had flour and didn't, and couldn't be bothered to go out again, so I had eggy bread with icing sugar dusted over them. not the same though...

I also used a Delia recipe for the first time tonight and had the nicest pancakes I've ever had. I found this recipe to be of the perfect consistency.

To make around 8 thinnish pancakes (sorry it's in ounces!) :

I cup/4oz of plain flour
A pinch of salt
2 eggs
7fl oz milk mixed with 3fl oz water

She says to add the salt to the sifted flour, make a well in the middle, add the eggs and mix until bound together, then slowly add the milk/water and mix to a batter with a whisk or fork.

I wasn't going to add the water but it made them light and airy.

She also said to fry them in butter which I did. Although it was nice, I found it used up all the butter each time so it may be better to use normal oil.

Get the butter/oil hot but not burning, add a small enough amount of batter to swish around and cover the bottom of the pan, turn over when it's set and cook to your taste.

I had the traditional lemon and sugar on mine but the possibilities are endless.

When making pancakes, mix some melted butter (about half oz to 3 tbsp flour) or oil in with the batter then you don't have to regrease your pan.

do you just call everything a crumpet, the pancakes you get in scotland you get in england and ireland too, crumpets taste and look different to pancakes! english muffins are also different from crumpets looks and taste wise

The pancakes I had on Tuesday were so scrummy, that I'm having them again sometime at the weekend - they're far too nice to have just once a year.

No. I call pancakes, pancakes, & crumpets, crumpets.

I'm fully aware of the difference between both.
