sugar in savoury dishes
Does anyone know why meals recipes often call for sugar?
For instance in tamota sauce based dishes? This puts me off and i have never tried a recipe like this. Does it have any reason, change any taste or anything? |

and can you not taste the sugar then?isnt it horribly sweet? |

Hi; I use sugar in dishes like curries, (made from raw ingredients) and chilli stir fries. Agree with Randomguy that if it's slightly tomatoey the sugar works well..

A little sugar is often used alongside chilli to balance the flavours.

Yes, a teaspoon of sugar in bolognaise sauce works a treat!

You use sugar in tomato base dishes to counteract the acidity and bring out the flavour.
You can use chocolate in chilli instead. To speed up caramlised onions add a pinch of sugar. |
