sugar in savoury dishes

Does anyone know why meals recipes often call for sugar?

For instance in tamota sauce based dishes?

This puts me off and i have never tried a recipe like this.

Does it have any reason, change any taste or anything?

I think sugar is used in tomato based recipes to bring out the natural sweetness present in them. When i make a bolognaise or a chili i always add a spoon of sugar depending on how much im making it could be 2 or 3.

and can you not taste the sugar then?isnt it horribly sweet?

Hi; I use sugar in dishes like curries, (made from raw ingredients) and chilli stir fries. Agree with Randomguy that if it's slightly tomatoey the sugar works well..

Nope it cooks in and helps improve the flavour of whatever tomato based dish you are cooking. This is in my experience only though, im sure others may have a different view. Its not like you are using half a bag of sugar anyway just a spoon or 2 should do it.

A little sugar is often used alongside chilli to balance the flavours.

Yes, a teaspoon of sugar in bolognaise sauce works a treat!

Yup...I use a little muscovado in chillis, curries and tomato based sauces just to enhance the natural sweetness. Alternatively I use a little honey in North African dishes like lamb tagine.

You use sugar in tomato base dishes to counteract the acidity and bring out the flavour.

You can use chocolate in chilli instead.


To speed up caramlised onions add a pinch of sugar.
