pizza type experiment
There was another thread about pizza.
I had lots of potatoes and wanted to use them. So I thought i would experiment a bit. So far i have boiled potatoes and then mashed them with milk and butter, to make a pizza base which i have spread on an oven dish. I cooked onions in oil and a vegetable oxo cube then blended them with tinned tomataoes to make the tomato part. I have steamed courgette carrot and broccoli for the topping. I will put cheese on top.Then cook a little till cheese melts. Only problem so far is mash base seems a little too liquid, hope it will firm up a bit. Edit a few minutes later - after being under grill for a few minutes, potato had formed a crust so could put tomato and toppings on, unfortunatley it was up to top of dish so tomato liquid began to slide off.Have covered it with cheese and put back under grill for five minutes, will see how it turns out. Edit again - just taken it out, it tastes great! But consistency of potatoes was definately wrong, base needs to be a lot thicker. Trial and error! I might do this agian with different toppings, tuna and sweetcorn, chicken and bacon, mmmm. |

When I make pizzas, I can never be bothered making real dough, and always make white scone mixture: flour, seasoning and enough milk to make a scone consistency. Knead and roll out to thickness required. Then top with whatever you want and cook in hot oven for about 10-15 mins. Occasionally I'll add parmesan, garlic powder and oregano to give even more flavour. I like the word EASY - and these two scottish scone recipes seem to lend themselves beautifully to pizza bases with a difference. LH |
