No tips as such because I've never made it before.....but I'm based in Morocco and yes it is delish! I would say though, that if you can get hold of the Argan Oil, it will be expensive but worth it, because it helps give the dish its authentic flavour. Wish I could send you some, as it's really cheap here!! (The oil I mean ) Enjoy!

Ooh I'm going to Marrakesh next month - Can you give me any recommendations? I love most things.
My wife makes a nice moroccan tagine from Worral Thomspon so probably the same recipe! It's lovely (although she doesn't like lamb, so we normally have chicken!).

You will love Marrakesh, it's got everything including snake charmers in the square! Food-wise, try mechouai - I'm not sure if thats the correct spelling but it's the best roast lamb I've ever tasted, also kefta (meatballs) either on their own or in a tagine. If you like fish you'll be in heaven! Then of course there is couscous, which you can have either as a main dish with meat and/or vegetables or even as dessert with cinnamon. Otherwise there's not much in the way of desserts other than fruit, ice cream or creme caramel. Is your mouth watering yet?

Thanks I love all of the above and I know once I get back I will want to try my hand at a bit of Morrocan cooking too.
We were thinking of eating our main meals in the square area rather than go to touristy restaurants - We're after the real local food.

Agreed, Essaouira is lovely and full of character. Unfortunately Agadir had to be totally rebuilt after the earthquake in 1960 so it has no history as such, apart from the old Kasbah. But I like the beach there
