Macaroni Cheese!
How do you make yours?
I make it the way my Mum always made it........ For the sauce I use 1 tablespoon of cornflour with half pint of milk and microwave for a couple mins until thick. Then add grated cheese and stir it in. Then I mix it with cooked macaroni. I put a layer of the macaroni cheese in a dish, then put a layer of baked beans, then cover this with the remaining macaroni cheese. Then I grate some more cheese on top and put some slices of tomato and some seasoning. Then in the oven at 180 degrees for 30 mins or so !

I make a white bechemel sauce, fry up garlic chopped bacon and sliced mushrooms. Grated parmesan and gruyere cheese.....Mix the white sauce with cooked Penne or Rigitoni add half the cheese's then finish with the chopped back/mush and the rest of the cheese and bake in the over till nice and brown on top

I use a recipe published by Heston Blumenthal in the Guardian a few years ago. He called it Gratin of Macaroni but, honest, it is just Macaroni Cheese.
Strangely enough, for Heston Blumenthal, it is quite a simple recipe; no liquid nitrogen or exotic scientific instruments are required! Serves 2 - 3 300g macaroni (use the largest available) 1 garlic clove 300ml double cream 60g Gruyère 30g Parmesan 20g butter Pinch grated nutmeg Salt and pepper Peel, chop and purée the garlic (sprinkle a little table salt over roughly chopped garlic and then, using the flat of the blade, drag it over the garlic, pressing down, until it is a purée). Grate the Gruyère and Parmesan into separate bowls, and set aside. Put the garlic and cream in a small saucepan, bring to the boil, then add the Gruyère, nutmeg and seasoning, simmer for five minutes, and set aside. Meanwhile, bring three litres of water to the boil and add 30g salt. Pre-heat the oven to 175C/350F/gas mark 4. Cook the macaroni in the boiling water for around eight minutes, then drain and combine with the garlic and cream base, adding a tablespoon or two of cooking water. Tip the lot into a baking dish big enough to hold the pasta. Dot with butter and sprinkle over the grated Parmesan. Bake for 15-20 minutes, and serve piping hot. |

God! We always make it the easy way and in my opinion the best. Great stodgy food. Boil macaroni, drain, add grated cheese to macaroni in pot, melt, serve. We sometomes add sweetcorn and fried onions or sliced smoked sausage as well. Good as a late night boozy snack or hangover food

this is my absolute hangover favourite. I make a sauce up (usually from a jar or packet) chop up some bacon then put it in the oven after sprinkling a thick layer of cheese. a mixture of mature cheddar and red leicester is usually best.

I miss it!! I can't eat it as I'm on a diet and it's full of loads of fat the way I like it which is extra cheesy

We sometimes add cherry tomatoes and/or mushrooms and/or broccoli. I've never thought of baked beans! I like hearing about these family versions of recipes, though!

Make a basic white sauce, dollop in loads of extra mature cheddar, mustard and pepper, slice a red onion and fry in olive oil till the onion gets all squishy, add that to your cheese sauce then bung it over some cooked macaroni and mix it all up. GORGEOUS
