corned beef hash

has anyone got a nice recipe for corned beed hash please??
i have to admit i have never cooked it myself before - only watched a girl doing it at a nursing home i used to work at = water, potatoes and corned beef plus some salt. tasted like nothing!

I like to do me as follows :

Boil potatos in slightly salted water until ready (just going soft)
Mash potatos with butter and milk until smooth
Add slices of corned beef, baked beans (I microwave them first), grated cheese (mature cheddar is best) and mix until all blended together (chopped onion is optional but as it gives me indegestion I use onion powder)
Put into a baking tray with grated cheddar on top
Bake for 10 mins at a medium heat and then under a hot grill for 5 mins to toast the cheese
Serve

The Yanks serve it with a poached egg on top for breakfast.

But North Americans have a different concept of corned beef. Usually it is a brisket soaked in a brine and boiled. It's also known as boiled beef. It's served with boiled cabbage, root veg, etc.

Leftovers are sliced and put in the breakfast hash with potatoes, onions, and green peppers. You have whatever egg you prefer on top.

The corned beef in a can is harder to find over here.

Yes , Corned beef in the States is what we call here Salt Beef

I boil & mash potatoes.......fry off an onion, add that & the corned beef, & mash it all together with some pepper. Delicious.

Yeah some people call them stovies. I make stovies with chopped up lorne sausage, diced potatoes, onion, carrot & turnip.

I boil cut up carrots, swede, onions, potatoes and any other root veg I have in. Add oxo cubes. Then just before it is cooked I add tinned corned beef cut into cubes....yummy

Dont add the corned beef too earlyor it will disappearintgo the gravy, it just needs warming through.

I do mine very similar but try the filling with pastry make a pie, but add some branston pickle instead of the onion, its YUMMY, i make them like pasties.

I usually make corned beef hash the 'traditional' way.......

Pan of water, add diced onion, carrot, potato, oxo cube, tin of corned beef.......simmer until the veg is cooked and the corned beef has disappeared into the gravy.........

Leave overnight and eat the next day........don't forget those burnt black bits stuck to the bottom of the pan, they're great !

Serve with pickled red cabbage..........


However..........


The other day i only had half a tin of corned beef after making butties, so thought I'd make coened beef soup......


I soaked some pearl barley overnight and cooked it next day with onion, carrot, potato, corned beef and bouillon

Although it was meant to be soup it thickened up so much it turned into corned beef hash with barley and was utterly delicious...........

I might make my hash like that in future.........
