Would this work / taste half decent?

Got my tame mechanic visiting today to assess my pride and joy to see how much of a dent she is going to make in my bank balance - anyway, I digress...

Because my time is going to be otherwise occupied this afternoon, I am making a quickie dinner tonght (well, that and the fact that I forgot to take something out of the freezer), so thought I would do some fishcakes with some home made chips and peas.

Now, for the homemade chips, I was considering cutting some relatively chunky chips, but instead of cooking them in the fryer, I thought I might lightly par-boil them (with a touch of sea salt in the water) then shallow fry them in beef dripping (unhealthy, I know) to give that real authentic chip taste that I remember.

Do you think it will work?

Cut some potatoes into chunky chips, par boil for 5 minutes. Set on a baking sheet, drizzle with olive oil (or beef dripping), sprinkle with some salt and pepper (chilli flakes are also good) Bake in a hot oven for 20-25 minutes. Much tastier than fried chippies! Enjoy
