I often just cut them into small (not too small pieces) and flash fry them in olive oil, garlic and chilli, and then add courgettes cut into sticks and have it as a vegetable. Must make sure it's cooked through. You can add soy sauce to that and have it with rice or fried rice.
Or cut them into small pieces, cook some sausages and cut them into small pieces, fry the aubergine until cooked, add sausages, small tin of tomatoes (depends on how many people), cook through and serve with pasta.
