Mashed potato with....

Any ideas as to what to have with mashed potatoes, as a vegetarian, besides sausages, pies or beans?

Grated cheddar, loads of salt and pepper. Fork.

Mash with a can of sweetcorn and cheddar on top and then a fried egg to make the cheese melt...

Loads of great things with mashed potato...
One of my family favorite is with leek and egg..
Mash tatties, but don't add too much milk..
Season well with salt and pepper
Add chopped and boiled leek.. (don't over boil the leek otherwise there wont be anything left after mixing)
Then chop (roughly) one egg per person and mix it in last
I would serve it with bacon bits... but i am sure a veggie sausage would work I make a stock gravy with the leftover leek water.

Then another great one is get a big pan... Tatties on the bottom... fill with water so it nearly covers them.
Then add a layer carrot... and then a layer of onion.
Boil that that with lid on.. Make sure you don't run out of water.. When tatties are cooked... strain leftover liquid. And Mash it all well... Add butter and salt and pepper. And make gravy of the left over liquid


Reading previous messages... at least mine are healthier options.. LOL

One great mashed potato tip I have, which I discovered myself is - stir a tablespoonful of peanut butter into your serving. Nutty Mash!

Mint or Tarragon works well with mash. I'd serve this with lamb - not good if your a vegetarian though!

We had asparagus, mushrooms and broccoli in a light creme fraiche sauce in the end (really wanted something to go with it, not in it, but good ideas for that!).

Flat mushrooms roasted with a coating/ filling of cream cheese, garlic, chopped up bits of mushroom ( from the stalks), spring onion, chives, a little bit of the mash. Drizzle a little bit of olive oil and season the mushrooms before adding the topping. Roast about 180-200 for about 20-25 mins seems to work fine .

For non veggies smoked mackerel can be used as well.

i know you said apart from pies, but i make a vegetable crumble. which we always have with mash. All you need is any veg you've got lying around, garlic, tins of tomatoes, some sort of bean (butter harricot etc not baked!) Worcestershire sauce, although not sure if thats vegetarian, bit of stock and herbs. You cook all that on the hob till nice and saucy. Then put in a dish, and top with a mix of breadcrumbs, pine nuts or walnuts, more herbs and cheese and pop under the grill! its delicious!

for non vegies you can also put some browned sausages in with the mix.

it's great for using anything up really.
