Help with freezing

Can someone help please about whether I'm safe freezing my curry.

In my freezer I have frozen diced chicken which I will be making the curry with, and I have a large pack of mince which I think I'll do a chilli with.

Is it safe to freeze leftover portions of these meals once I've made them, or can they not be frozen because they are made from frozen meat?

I do all the time, but am not sure how "safe" it is.

If you've cooked the meat since it's thawed and re-freeze it again once it's cold then it will be fine.

I know this isnt quite the point but I think its relevant enough. If you're freezing fresh stuff you should put it in the fast/deep freeze compartment of your freezer (if you have one) because freezing at lower temperatures and over longer time breaks up some of the molecules in the food leading to loss of taste.
