I love Guinea Fowl, but would have thought it was wasted in a curry

I'd agree, to some extent. Guinea fowl is best if cooked simply so you can enjoy it's unique texture and flavour.

I'll stick to cheaper meats for curries.

*Scratches head*

Why would you want to curry a guinea fowl?

What next, quail chilli?

I know at least 3 restaurants in Brum that do Curries with Quails, and one that does Pigeon Curry too.

Exactly - why curry it!

I love mine roasted for 15 mins and served with a gravy using the bird roasting juices, dash of vermouth and dollop of redcurrant jelly, served on toasted spelt.
