Fish ideas please

I have just replied in the tuna thread and was saying I really would like to eat more fish.....but I am not very good on ideas of how to cook and what to serve with it.

I cook salmon, cod, haddock, sea bass and kippers but would love to have ideas on other fish such as mackerel, tuna for instance. I would be very gratefull for some ideas

Bone, and roll in Porridge/Oatmeal.

Pan fry.

Yum. Oats go all crispy saoking up the oil.

For 2+ people. Good for entertaining.
15 minutes.
Get some small fillets of different fish (cod, salmon, etc) and some defrosted seafood cocktail (or just prawns and mussels in shells.)
Cut the fish into fork-sized bits.
Fry some garlic, mushrooms and red pepper in a pan until softish . Turn down the heat and add the fish and shellfish. Cook gently for a couple of mins.
Add a small tub of fresh tomato and herb pasta sauce and gently heat. Try to keep the fish from breaking up.
Serve stirred gently into fresh tagliatelli with garlic bread and a decent white wine.
We had it in Nice, served in the black iron frying pan.
The food of the gods.

Monkfish scampi is one of my absolute favourites now.

Use the recipe here but substitute monkfish gougons for the scampi. Ignore the 'cones' bit and serve with French fries.

The author of the article suggests that the use of monkfish to make scampi in pub meals of the 70s is an 'old wives tale'. But see my thread from September of last year and note the posts from indianwells.

Only trouble is that I have rarely found monkfish since then - and its expensive.

I made a variation (didn't have all the ingredients in the cupboard so left out the garlic!) of this recipe the other night: http://southernfood.about.com/od/tun...r/bl51130b.htm

and ended up serving the sauce with pasta rather than putting in an actual pie - it was delish (my oh usually considers canned tuna as a last resort meal before the shopping trip, but he's asked that I make it again!)

Grilled seabass with honey, onion and lemon. Delicious, and very easy.

Serves 2

Thinly slice, not dice, an onion. Brown the onion in a frying pan with a little olive oil for 10-15 mins until it's caramelised. Add 1tbsp white wine/cider vinegar and 1tbsp honey, and stir, Heat for one more minute.

Lay out two sheets of tin foil in a cross shape, lightly oil the top sheet and place a seabass fillet skin down. Spoon on the onion mixture, pour over a little fresh lemon juice, add a sprig of rosemary or sprinkle with dried rosemary, same for thyme, drizzle with a little more olive oil and wrap up. Do one parcel per person, then grill on high for 20 minutes.

It's absolutely delicious, and I usually serve it with boiled new potatoes and asparagus. And a nice bottle of white wine, naturally

Try making a stir fry with strips of tuna steak instead of other meat, with just soy sauce is nice.

Mackerel Curry. Either Green Thai style or Indian. Fry all of your vegetables, spices and bits, add a load of whole Mackerel fillets, cover the lot with coconut milk, cover and simmer. I usually make a massive pan full and then freeze lots of individual portions. Nice with any kind of rice or even on its own

Grilled mackerel topped with sprigs of fresh rosemary and a light peri peri marinade. Serve either on a bed of wild rice or with sweet potato mash and vegetables.

Mackerel is a brilliant fish. I eat a lot of it.

Slice up onions, fennel, tomatoes, peppers, courgettes and a chilli and put them all in a plastic bag, add a bit of olive oil to coat all the veggies and shake it about it a bit. You can also add a can of some sort of cooked pulses at this stage - butter beans or chick peas or haricot beans are nice.
Pour all of that in a baking tray and then stuff a mackerel with fresh coriander and put it on the top of all the veg.
Bake the whole lot in the oven.
Deeeelish.

Or do my other mackerel favourite; fry it and serve it with potato salad with a dash of horseradish and cooked (not pickled) beetroot.

Mackeral rules, but lots of it looks stale and old in supermarkets, so I don't buy it.

I agree - its the king of fish IMO

We trail mackerel lines from our yacht (it keeps the kids amused )
Our record is 9 caught from Portsmouth to Cowes and less than 45 minutes from sea to stomach

I grew up in Brighton. we used to buy them fresh on the beach. That has spoiled it a bit.
