Rice and peas

I was watching Beat the takeaway the other day and Ainsley cooked Rice and Peas........which was actually red kidney beans. Some kind person, I'm not sure if it was on here, I think it was, gave me a great recipe for the rice and peas. It would be great if anyone could give me their version of this dish too.

I am going to cook jerk chicken with this, I have never cooked this before , though its only a matter of marinading the chicken in the jerk sauce (from a jar) Hope it tastes as good as it sounds

Thanks Dolly, thats the one I was given and it looks lovely. I have bought all the ingredience for it so am looking forward to trying it. I just wondered how others cooked it.

I'm getting fed up of the same old same old and thats why I started the whats for dinner thread, to maybe get some ideas for something different and there are some really good ideas on that thread too

The only thing I'd say is that using tinned kidney beans is never ever the same, as when you cook the dried kidney beans or dried gungo peas it mixes with the rice in a very different way. It needs more attention than just cooking plain rice especially if you use creamed coconut it tends to be stickier.

Here's another recipe.

6 oz (170 g) gungo peas or black-eye beans or kidney beans
¼ pt (150 ml) coconut milk
8 oz (225 g) brown or white rice
1 sprig thyme
freshly ground black pepper
salt to taste

Soak the dried peas or beans in plenty of cold water overnight. Drain. Place in a pan with enough cold water to cover. Bring to the boil, cover and simmer for ¾ - 1 hour until the peas/beans are tender. Add the washed rice to the pan together with the coconut milk and a seasoning of thyme, freshly ground black pepper and salt. Add extra water to bring the level of liquid in the pan 1-2 cm above the rice. Cook on a low heat for a further 20-25 min by which time all the liquid should be absorbed and the rice soft.
Serves 4.

Thanks for this I will save it to my pc. i have never heard of gungo peas to be honest, are they actually peas or beans ? Excuse me if I am stupid. This time I will have to manage with tinned beans though.

Of course you're not stupid, anyway Caribbean people tend to to call beans peas so it's confusing. I didn't know if gungo peas had another name so I googled and found this

So they are really peas and not beans and also known as pigeon peas or congo peas. Which I didn't know.

Thanks for that. I'm really a lazy cook as far as beans are concerned and tend to use tinned. I suppose if I started using them more I could try using dried ones.

I'm really getting fed up of plain dinners and although I do make the odd spagg bol, curry and chillie, I would really like to try more spicy foods, especially Caribbean......the dishes always look really tasty. I suppose I should google a few and get some ideas, but if anyone has any tried and tested ones I would be very appreciative if they would share them

You have to boil them for a certain amount of time i think, yes

Dunns river produce they do cans of mixed beans consisting of Gungo peas,Blackeye peas and Kidney beans,This is what I use.

One of my favourites is a twist on 'rice and peas'

Sweat off some onion at chopped corned beef add this to cooked rice and peas

lovely!
