Homemade chocolate truffles

Evening...

Has anybody got any tips for making white chocolate truffles? I can do milk chocolate and dark chocolate truffles but white chocolate ones totally elude me.

The few times I've tried, the white chocolate ganache hasn't set, and has remained more like white chocolate mousse (but stickier) in texture. Absolutely useless for making truffles, but fantastic with fresh raspberries!

Is it just that I'm getting the balance of chocolate to butter to cream wonky or am I doing something wrong? No matter how long I leave the stuff it just won't set.

Any ideas?

They still look yummy though... both times.
