How do you make Chilli con Carne?

Hi,

Am thinking of making a chilli con carne for dinner tonight.
Got the mince, but am unsure of how to make the sauce.

I fry up some finely chopped onions.
Add the mince and some seasoning and brown it.
Add a tin of chopped tomatoes, some finely chopped chillis, a tin of kidney beans, tin of canellini beans, a spoon of tomato puree and a few splashes of tabasco.
leave it to simmer and so the flavours infuse.
serve with rice, sour cream and guacamole and some grated cheddar.

Nice to add a few chopped mushrooms to it aswell, and to make it perfect have it with egg fried rice

I do it like this:

Fry the mince (no need to add oil), drain and return the pan with a crushed clove of garlic and chopped red onion plus a sliced chilli if you like it hot. Cook gently until the onion is soft. Add a teaspoon of ground cumin and another of ground coriander. Then add a couple of sliced peppers (I usually do a red and a green), a tin of kidney beans in chilli sauce (usually called chilli beans) and tin of chopped tomatoes. You can also add a beef stock cube if you like, and you could add cayenne pepper to make it hotter. Finally I add a teaspoon of cocoa powder. Cook for at least 20 minutes to make sure the beans are cooked through. If it comes out too hot serve with a dollop of natural yoghurt to cool it down.

I use lamb mince, red onions, a little bacon, tin of tesco kidney beans in chilli sauce, another tin of kindney beans and a jar of ragu sauce (usually red wine and herbs) plus worcester sauce and a little ketchup. in oven for at least an hour. LOVELY!

Add a few pieces of bitter chocolate at the end of cooking and stir in to balance the heat and give depth to the spices.

1lb Mince Beef
1 large onion
1 Green Pepper
1 clove of garlic (crushed)
Rounded Tbsp Flour
2 tbsp Chilli Powder (or as much or little as you need for your taste)
1 tsp Paprika
1 tsp Cumin
2 tbsp Tomato Puree
1 Large Can Tomatoes
1 Can kidney beans
Oil for cooking

Chop onion and pepper sweat off in the oil with crushed garlic.

Add mince and until browned - drain excess fat

Add flour, Chilli Powder, Paprika, Cumin, and Tomato Puree - stir well

Add Tinned Tomatoes and kidney beans and simmer for 1hr 30 mins for best results (this can be shortened if time is an issue)
