Marinaded chicken - cooking advice

I have just marinaded a chicken breast with BBQ marinade and put it in the fridge. How should I cook this for dinner tonight? I was planning to cook it in the oven, but how can I do it so it doesn't go dry?

Also how could I make a little extra BBQ sauce to put over the chicken later as I'll be serving with rice so need a sauce really to go with it. Any suggestions?

To stop it going dry, pop it in foil on the oven tray.

If your BBQ sauce was from a jar, easiest way is to look at the label of the jar and see whats in that. Then you could go from there.

Wrap it in tinfoil with a little water in it. That'll keep it moist.......keep some of the marinade to one side & heat that up before serving to pour on top.

Finish it off by heating your grill tray under the grill, and once it is searingly hot, quickly put the chicken onto it and press down. That way you'll get the nice burnt barbecue XXXX criss-cross latticing effect on the meat.

OK this is for the microwave

1 large onion, chopped
2 tbsp oil
1 clove garlic, crushed
1 x 142g (5oz) can tomato puree
2 tbsp lemon juice
2 tbsp soft dark brown sugar
150ml (1/4 pint) beef stock
2 tbsp Worcestershire Sauce
2 tsp dry mustard
salt and pepper


Place the onion and oil in a large jug, cover and cook on HIGH for 4 minutes. Blend in the remaining ingredients, seasoning with salt and pepper.

Cover and cook on HIGH for 4 minutes, stirring once during cooking.

Serve with sausages, chops, kebabs, and barbecued meat and poultry.

Makes about 3/4 pint

Microwaves should be banned around these parts! They are the product from the devil, unless you cooking a baked potato, baked beans, or reheating tea

I don't microwave often though, just for re-heating

That sounds good!!! I'll make it next time !

I just had my dinner of chicken and BBQ sauce and it was sooooooo nice!! I cooked the chicken in foil in the oven and made some BBQ sauce to go with it from a different recipe (some water mixed with some BBQ marinade/sauce, ketchup, worcester sauce, vinegar and seasoning). Was really really delicious!

You can make some good stuff in a microwave! There's nothing wrong with it, it adds convenience to many recipes. Just cuz it's a technology advancement from a regular oven doesn't mean it's bad .

Probably too late for your meal but the best way to cook chicken in the oven like this is to heat your oven to the higest it will go.

Cook it really quickly, uncovered at a very hot temperature and it will be lovely and moist. This is the reason that tandoori cooked meat is lovely and tender when fresh as it is cooked in a very hot tandoor, metal skewers help for larger bits of chicken to help heat the inside.

yes it's how I always cook veg. It keeps the vitamin loss to a minimum and gets them cooked just perfectly .

But I think that tandoors are twice as hot, if not more so, than conventional overns.
