Sandwiches
Despite my rampant feminism I often make my husband sandwiches for his lunch. But I'm really boring with them I know, cheese, cheese and ham, egg and lettuce...that's about it.
Give me your suggestions. He'll get the shock of his life if he opens up the lunch box and finds something other than cheese.

I make a salad sandwich which contains, ham, lettuce, tomato, cucumber, spring onion, topped with a dollop of mayo, between wholemeal bread.
Mind you I don't know how well it would travel in a lunch box.

I used to work with this guy and his sandwiches looked gorgeous..crusty wholemeal bread,sliced turkey and cheese with wholegrain mustard. I tried it myself and they are gorgeous. The turkey was the *fresh off the bone* type.

Turkey, a little bit of dijon or wholegrain mustard and loads of fresh spinach in wholemeal pitta is a favourite and doesn't take anytime to prepare.
I also like tuna mixed with olive oil, orgegano and black pepper on wholegrain bread. Can you get manouri in the UK? I know it's another cheese but it's a nice one particularly with pesto or olive pate and some cherry tomatoes. |

King prawns and avacado is usually a winner.
Tuna, red pepper and hummous is good too. |

Im hopeless with sarnies. I made some the other day as i had some lovely seeded Hovis bread .... but all i could find to bung in it was cheese. Thats it. No pickle, tomato - NOTHING.
I must rectify this on the next shop !! |

I like to add flavour to sarnies with herbs... so to a chicken Mayo sandwich I'd add Tarragon and to hot smoked salmon and creme fraiche i'd add a bit of Dill.
I also make a roasted vegetable and chicken wrap, which I add a few sprigs of rosemary or thyme |

Egg mayo with bacon and beans mixed through is delish, but some of the most interesting ones I've made are leftover dinner from the night before. It works with most things, roast dinners make for some of the best - I usually chuck everything (stuffing, parsnips, whatevers left!) chopped in a bowl and stir some mayo through, viola instant unusual tasty sandwich. The Caribbean chicken ones we had last week were amazing

The loveliest sandwich I ever had was a slab of seared tuna, wasabi (Jap horseradish stuff) mixed with mayonnaise, and dressed rocket salad in a soft white roll.
And I'm usually a brown bread person! Not sure how practical it is for lunchboxes though... |

What I tend to do is make my own pate type mixtures in the evening/weekend put them in the fridge and use them when I want too as fillings with lettuce or tomatoes etc. Plus it doesn't take much time to make the sandwiches in the morning you just spread on the mixture.
I'll try and dig some up for you, I have got them all scribbled down in my notebook in the kitchen. But you can find lots of ideas on the net. Most of my recipes are vegetarian my faves is mushroom and mixed bean, but there is lots of different types, meat eaters may like to try salmon or prawns, you can add lots of different spices or add garlic, nuts and onion, make it really healthy as well. |

Great to make when we have leftover chicken, beef, pork, etc. from a Sunday lunch. I freeze it in single serving size containers so we have a choice. Just take one out the night before work and heat it in the microwave at work or put it in a flask. Hubby hates pasta but I like it and it could be either heated up in the microwave or make a cold pasta salad. Actually, a cold potato or pasta salad with a bit of fruit or something could be nice with any of the sandwiches mentioned above. You didn't mention your husband's occupation, maybe he doesn't have access to a microwave? |

However it is either make it myself,or go to Hythe and buy it in Waitrose and then wait ages for the bus. None of my local supermarkets stock it. |

i like ham with olives, egg and tomatoe, turkey and cranberry with stuffing, lettuce and beetroot with salad cream.
But unfortunatley, i usually have tuna mayonnaise, as its the easiest thing to keep in the house - the other stuff you have to plan to buy fresh. |

![]() It sounds yummy. Flasks are great but it does take a bit of time in the morning to heat it up so have to get up that little bit earlier. Another trick with keeping food piping hot in flasks is to put boiling water from the kettle in it whilst you are heating up the food and pour it out just before filling it with food. |

![]() In the summer I love a small crusty french baguette with slices of cheese, red pepper and cucumber. It's really refreshing! For other lunch variations, try giving your husband different types of bread and rolls, or make him a small fruit salad with apples, grapes, oranges and banana? If you have any small airtight bowl shaped boxes, you could slip lots of different things in along with one of those small ice thingies which you pop in your freezer over night to keep your lunch cool during the day. |

![]() Boiled egg mashed up with thinly sliced onion and hummus Sardines in tomato sauce mashed up with slices of spring onion and strong cheese Chicken, lettuce, parmesan and anchovies as a sort of chicken caesar salad sandwich Salami and horseradish Smoked mackerel with horseradish and beetroot - that's a bit sloppy, that one, but it's gorgeous. My favourite sandwich at the moment is chicken and tomato on white bread, using pesto instead of butter. YUM. |

Another sandwich which doesn't sound particularly gourmet but tastes delicious is a simple crisp sandwich, maybe with a slice of cheese or ham.

I'd like to see someone tackle the issue of the dry crust on a sandwich. Wouldn't stuffed crust bread be just delicious? A crust thats got some kind of moist filling which meant that you didn't have to suffer through the sometimes dry and bland crust
