Oxtail Stew
Oxtail
Onion Tomatoes (small tin or fresh) Carrots Potatoes Any other veg of choice Vegetable oil Trim excess fat off oxtail, put in large pan of water with bay leaf, salt to taste bring to boil and simmer for three hours checking water level. Drain water (keep for stock) Add oil to pan fry oxtail till brown add onions and tomaotes, season with pepper add potatoes, carrots and enough stock to cover bring to boil and simmer for half an hour If you are using other veg in stew add to allow enough time to cook, kidney beans go well with this dish. Serve with boiled rice |

Serve with boiled rice Oxtail is one of my favourite meats and it's so cheap in butchers shops. Most people only know that disgusting Heinz oxtail soup gunk, but fresh (or even frozen) oxtail tastes nothing at all like it. The juicy chunks of rich tender meat just fall off the bone and melt in your mouth! That's it, I'm going to have to make some now! |
