I nicked this from someone else, I've not tried it yet but I'm determined to make it this week.
chop leeks, fry in some butter, with some salt and plenty of black pepper, maybe a little garlic, maybe some chopped bacon. Once cooked, add the cream ( creme fraiche works well too ), stir and simmer for a couple of minutes. Taste to see if it needs any more salt. Stir in cooked pasta. |

Fry some leeks and mushrooms (with a little tarragon, if wanted), add some creme fraiche. Put on pasta.
Chop us some aubergines into small chunks, fry in olive oil, garlic, a little chilli. Add some chopped up already cooked sausages and a small tin or sachet of tomatoes (depending how many for). Fry some asparagus in butter, add some lemon juice, add to pasta with peas and/or chopped up artichoke heats. Cook some courgettes and spinach. Heat up some creme fraiche, add vegetables to it and add to pasta. |

I cook this for my veggie friends but it's so delicious myself and hubby often have it now!
Dice aubergine and season, fry it with some garlic. Once softened add a few tablespoons of tomato puree Add a tin of tomatoes and a spoon of sugar and season again. Leave to simmer cook pasta, when sauce is thickened. Drain pasta, toss into sauce. Garnish with toasted pine nuts, torn fresh Basil leaves, and freshly grated parmesan. Delicious!! |

A very easy, but very tasty one - more for summer:
Smoked salmon Creme Fraiche Herb des Provences Dice the salmon as large as you want, mix in with the other ingredients. Pour the cooked and strained pasta over the top and mix until happy. A really fresh, clean taste. |

I think I've posted this before but it's so good and so simple it's worth posting again:
sautee 1 onion, 2 large cloves of garlic 2 sliced red peppers and 3 sliced courgettes, when slightly softened chuck in a glass of dry wine, around 5 or 6 diced sundried tomatoes, around 10 diced kalamata olives, a large pinch of crushed chilli, and a handful of fresh chopped parsley, cook it all up to the consistency you like, stir it into some cooked wholemeal pasta and top with freshly grated parmesan. |

This takes as long as it takes for the tagliatelle to cook to get the pasta on first. This is for 2 people.
2 courgettes - use tattie peeler to make into ribbons. Fry in oil and garlic for 6/7 minutes. Add juice of half a lemon, a dollop or 2 of creme fraishe, some chilli flakes, some parmesan or strong cheddar, salt & pepper. No need to be exact with anything - to taste really. Mix through whilst still on the heat. Drain the tagliatelle and stir through some pesto. Pasta on to plate and courgette mixture on top. Lovely and fresh. |

Very easy and quick dish.
Pasta Shells Ham (or bacon) Philidelphia Cheese Single Cream Garlic Boil the pasta shells and cut up the Ham or Bacon into small pieces and lightly fry in olive oil with fresh garlic. When the pasta is almost ready, put half to three quarters of a tub of Philidelphia Cheese into the frying pan and let it melt. Drain the pasta and then add the cream to the frying pan, enough to warm it but don't let it boil. Add the mix from the frying pan back into the pan of pasta and stir. Serve immediately with a sprinckle of pepper or paprika to add a little colour. Very easy, very quick and very tasty. |

You can sauteč pretty much any vegetable and add it to pasta - peppers, peas, aubergines, zucchini, mushrooms, asparagus, artichokes, cabbage (yes, yes, add also a bit of white sacue and gratin it in the oven, you'll see the result).... .
Basically, anything you have in your cupboard or fridge can be added to pasta, that's its beauty: you have any leftover seafood (squid, prawns, mussels, anything, really), sauteč them in a little oil and garlic and throw them on the pasta, with or without tomato sauce. Or a simple can of tuna (with a tiny bit of oil), just on the pasta and mix it. Lovely. Most type of cheeses go well on: grate them (or, if fresh, just pour them on the hot pasta with a little cooking water left and lots of grated Parmesan) and mix them with the hot pasta. Try gorgonzola, mozzarella, Cheddar and another cheese, all mixed together and melted before pouring on pasta, and you can call it 4 cheeses pasta. Meat, that's a little more difficult: ham, both cured or not (the Parma one) do marry well, sausage does, minced meat, but I wouldn't use chicken, for example. You still have ample choice, haven't you? |
