Well waste not want not.

I am a meat eater with a few ethics and think we should do more head to tail eating.

Offal happens to be one of the very, very few foods that I won't eat. However, I did try some of my friends pork and liver pate on some crusty bread and it was delicious! Otherwise, I just can't stand the taste - but more so the texture - of offal.

I try not to be too precious about food honest, but chitterlings = wrong wrong wrong

Quote:
“Wikipedia:
Chitterlings must be soaked and rinsed thoroughly in several different cycles of cool water, and repeatedly picked clean by hand, removing extra fat and specks of fecal matter, this is because the part of the pig the 'chiltlins' come from are the last few inches before the pigs rectum.”

The french tend not to clean their tripe, so it is rather high, delicious though.

Not since I was a kid. I don't eat burgers unless I make them myself out of steak mince.

It's from my parents that I learnt my taste for offal. And of course everything they cooked was spiced or curried (Jamaican heritage).

I forgot about Lights (cows lungs) I haven't had them for years. I'm going to Brixton market Saturday morning to see if I can get some ready cleaned Goat belly (tripe). I've never cooked it myself, but I'm in the mood to give it a go.

Actually, I don't eat chicken skin either ! I do eat pate, but I just can't cope with a lobe of liver on a plate waving at me...
