Duck Eggs
Does anyone know if Duck eggs are suitable to make an omlette with? And if they are would anyone have a decent recipe for them?

Duck eggs make a great omlette. They are about 3 or 4 times the volume of a hen's egg and need to be cooked as duck eggs have a porous shell. Just use any hen's egg recipe for an omlette ... bacon bits, mushroom, cheese, herbs, etc.

I was told Duck Eggs go off quicker than normal eggs, is that right?

a resident has duck eggs fetched in for him & we noticed this week some were reaky blue/green
