Squid!!!

I am having, stir fried squid with veggies and rice for dinner tonight...

I've also had squid that I stuffed with riccotta and spinach, grilled on the barbie.

Both are lovely ways to eat squid.

Has anybody got any other fave squid recipes?

I like it on the BBQ, rub with garlic first and olive oil first and then squeeze lemon juice over while cooking.

i love battered squid like you buy in the restaurants and when i cook it my self i just lightly fry it with lots of garlic in butter... mmmmmM!MMM!MM!M!M!!!!!

I like to boil the squid or bbq them, boing it is so nice though.

Properly cooked Squid is beautiful. Unfortunately most peoples experience of it is some Deep Fried Frozen Stuff in the pub.

Yeah. "Polpi in Purgatorio," which roughly means "Octopus in Hell."

You can use octopus or squid or cuttlefish... works equally well. (Imo, cuttlefish is the best of the cephalopods and you can sometimes get it cheap because people don't realise how good it is. )

Fry an onion and some garlic in a little olive oil, then add a small amount of fennel seeds (about 10-15 should do it as they're quite strong.) Lob in a tin of tomatos, lots of red wine, and enough chillie flakes to give it the level of heat you like. (So you are just making a normal tomato sauce with lots of red wine and chillie, laced with a subtle anise flavour from the fennel in the background. Make more if you are using lots of squid.)

Lob in your prepared bits of cephalopod and gently stew uncovered for about 50 minutes, until the squid or whatever is beautifully tender and the sauce has thickened to the texture you like. Don't worry if you need to boil it down for longer. Check seasoning, throw in a bit of parsley to serve if you have any handy.

The advantage of stewing squid etc is that it is always melt-in-the-mouth tender; there is no danger of it being chewy/rubbery.

Another delicious way is to stuff baby tubes with a duxelle, secure with cocktail sticks, put in a dish half-filled with white wine and bake.

I like cuttlefish as it happens but it can be difficult to find.

I'm, also a fan of anything with octopuss in it as well and I like to make Black rissotto with the ink

Check out the River Cafe Cookbook... just simply char-grilled with Chilli Sauce. Woof!

That stuff is not for the faint-of-heart, even among devotees.

Definitely "yes." On average it is quite time consuming to clean them and their innards are disgusting. For your first go it is well worth paying a little extra for ones that are already cleaned, if your fishmonger won't do it for free.

Yes, and rapeseed oil pastilles, and I put on a tape of Jennie Bond's greatest links while eating them.
