Gelatinisation of Starch

Hi everyone, i really need some help for an assignment for school and i was hoping i could find it here.

Basically i need to make a meal, sweet or savoury, that shows the property of the gelatinisation of starch (starch grains burst and absorb water or something like that) so it must have flour or cornflour in it.

I was wondering if anyone here would know a good recipe or where i could find one? It needs to be something simple that i could make it about 1 hour...i have looked everywhere so any help would be great.

lemon meringue pie any good ? the lemony bit is made from gelatinised cornflour. you'll find many easy recipes on the web....google is your friend..............i bet st delia would have a recipe online too. you could always use a ready made pastry case and it would be childs play to make the filling and very yummy too
