The difference is quite simple. The first deception was conducted before he entered the house. His application, his video, all the things where he had help from his media-savvy brother, these things said "Occupation: Fish Trader". Maybe he elaborated, but C4 would have thought it was a nice angle and kept it in. Something for the grannies out there.
Once in the house no one challenged him on it, so there was no need for more deception. No one at home, none of his church friends need to see him pulling a fast one. Just keep your head down and play the fool and hope for an easy ride to the end and a career in TV.
But one of the tasks involved him giving his actual opinon. He had no escape. He could have lied outright, but then everyone would know what a fake he is. He would have gone down in the estimation of the church (piano or no piano) and the only people that matter to him.
You can see how much it hurts him to give the answers. He squirms like someone being forced to admit a crime. he knows that his opinions will do him serious damage with all sensible, liberal people, but he sees no other way out.
He needn't have worried. C4 have already done the editing trick and made him into a jumper-wearing, fudge-making bumpkin and he'll actually be introducing 12-year olds singing "Ave Maria" in York Minster before the year is out.
It's a lot harder to come out and lie in public than it is to simply play a part which represents a small part of your real personality.
