Hardly suprising I suppose, but Geri Horrorwell's 'Mi Chico Latino' was a pretty obvious rip-off of Madonna's 'La Isla Bonita', with a bit of contemporary Jennifer Lopez latino-pop-beat thrown in by way of excuse.

Middle-aged karaoke cheese favourite Wind Beneath My Wings and boyband cheese favourite You Raise Me Up.
They both appear to be based on the chords and melody from Danny Boy, which is an Irish folksong IIRC.

To their eternal and undying credit, at a UK show once - think it was Reading festival - Nirvana played the opening riff of "Teen Spirit", then proceeded to do "More Than A Feeling" in full !

Boney M started Rasputin' with part of Cozy Powell's instrumental Dance With the Devil
Which in turn uses Jimi Hendrix's 3rd Stone from the Sun, and This riff is also used in Right Said Freds Im too Sexy

An Avenged Sevenfold song I saw on the Kerrang channel yesterday had a section that sounded like I Will Survive.
