Salmon Recipe

Have some lovely salmon fillets for dinner tonight. Any suggestions on how to cook/serve this to make it a bit more interesting?

I'm going to attempt to make salmon en-croute tonight.

Salmon fillets wrapped in cream cheese & spinach then pastry. In the oven for 25 mins. Hopefully, will be ok.

That sounds absolutely lovely! Three of my favourite ingredients. I can't wait to hear how it turns out.

Fry the steaks then add a bechemal sauce with green peppercorns, dijon musatard and dill.

Here's my favorite:
Baked Salmon with Chilean Fruit Salsa
prep time 15 min./ baking time 10-15 min./ serves 4

1-1.5lb Salmon
2 lemons
Salsa:
2-3 medium nectarines or peaches
3 kiwi fruit
1 small ripe avocado
1/2 cup red onion, finely chopped
1/4 cup cilantro, finely chopped
1 jalapeno, seeded and finely chopped
2 TBSP fresh lime juice

1)Heat oven to 450 degrees F. Dice nectarines and avocado into 1/4 inch pieces. Toss salsa ingredients together and season to taste with salt and pepper. Set aside while fish cooks.
2)Place fish skin-side down on baking sheet sprayed with non-stick spray . Season top side with salt and pepper. Bake 10 - 15 minutes or until color turns opaque and fish just begins to flake with a fork.
3)Remove from oven and cut into 4 portions; remove skin, if desired. Spoon salsa over salmon and serve immediately with fresh lemon wedges.

That sounds absolutely lovely! Three of my favourite ingredients. I can't wait to hear how it turns out.
It was lish - so much so that I had it yesterday too. So easy - and here's how I did it, if you fancy trying : I make them individually by the way so this is the recipe for 1 fillet. I don't measure anything though, I just go by how big the fillets are.

Wilt some spinach and parsley together
Leave to cool then roughly chop and mix with some cream cheese (I use low fat Philly) & crushed garlic.
Season the mix with salt & pepper.
Get some ready made puff pastry (or if you're clever, make it yourself).
Roll out to double the size of the salmon fillet
Cover fillet with the cream cheese mix, place salmon on pastry and fold over into a pasty type shape.
Fold & pinch the edges to seal. Brush on an eggwash.
Stick in oven at gas mark 7 for 20 - 25 mins.

Serve with green salad. Yummy.

Experimented with this recipe several times now - once with honey and once as suggested. It is really delicious!! Will certainly try some of the other suggestions too as fish is my main source of protein as i dont eat red meat.

My husband loves that Maple Glazed Salmon recipe. It's nice to know it works with honey too. I'll try it sometime.
