I think the last task is pointless. There's no winner in that the outcome isn't dependent upon it (unless one of them really cocks up!)

I don't see that this is the case. Last year it was building design and pitching to real estate people. That was the direction that SAS (rightly or wrongly it doesn't matter) saw his business moving in and he wanted to bring on an apprentice for that area. Simon excelled so (despite Kristina being *arguably* stronger throughout the rest of the series) Simon won.

Although I believe he does take into account the time each of the finalists spends working for him between the end of filming the series and the broadcasting of it (according to Saira Khan anyway).
