Someone suggest me something for tea
I am completely lacking ideas. I am going shopping (Morrisons) on the way home from work and want some ideas of what to get. I am not adverse to some that takes time to prepare.
I will more or less eat anything so there are no restrictions on ingredients. So, suggestions please, and if its anything too complex then instructions would be great.

For 2.
Flatten a couple of chicken breasts, coat in flour, egg, and breadcrumbs. Lightly fry in olive oil until light golden on each side. Lay in a baking dish. Top with some sliced Mozzarella and pour over a jar of good tomato sauce (I like Bertolli). Put in oven for 25 minutes at 180, taking out after 15 minutes to sprinkle some parmesan and then back in for the last 10. I serve this with garlic and rosemary cubed roasted potatoes. Trust me, you won't be disappointed.

not sure what it is called as my friend did it for me once:
Ingredients: 4 boneless, skinless chicken breasts 1 cup salsa 1 package reduced sodium taco seasoning 1 can reduced fat cream of mushroom soup (condensed) 1/2 cup reduced fat sour cream Directions: Add chicken to slow cooker. Sprinkle taco seasoning over chicken. Pour salsa and soup over chicken. Cook on low for 6 to 8 hours. Remove from heat and stir in sour cream. Serve with rice. hmmm actually - will take too long for dinner tonight - maybe one for the future though - let me have another think!! |

That actually sounds really nice, as said too long for tonight but a definite maybe for over the weekend. thanks

Again not sure what it is called sorry!
3/4 cup wheat germ 1 tsp table salt, divided 1/8 tsp black pepper 2 large egg white(s), slightly beaten 1 pound uncooked boneless, skinless chicken breast, four 4 oz pieces 3/4 cup water, boiling 12 medium sun-dried tomatoes, without oil 7 oz canned pimento, or jarred roasted red peppers 1 Tbsp red wine vinegar 1/2 tsp table salt Directions: Preheat oven to 375ºF. Lightly coat a baking sheet with cooking spray. Mix wheat germ, 1/2 teaspoon salt and pepper and pour onto a plate or flat bowl. Place slightly beaten egg whites in another flat bowl. Dip each piece of chicken in egg white, then in wheat-germ mixture to coat. Place chicken pieces on baking sheet and bake for 20 minutes. Pour boiling water over sun-dried tomatoes and allow to sit for 10 minutes. Put tomatoes and water, roasted red peppers, vinegar and remaining salt in a blender and blend until smooth. Taste and adjust for salt. Heat sauce in microwave or in a saucepan and pour over baked chicken when done. |

West African Peanut Chicken
My lot love this. Hope you you are not sensitive to peanuts. Ingredients 1/2 cup peanut oil (or any cooking oil) 4 chicken breasts, cut into bite-sized pieces onions, chopped or minced or pureed in food processor 2 cloves of garlic tin of chopped tomatoes or 4 cups pureed tomatoes or 3 c. tomato sauce and 1 c. water) 1/2 cup peanut butter 1 cup water a bay leaf cayenne pepper or red pepper, black pepper, salt Directions Heat oil in a deep pot or deep frying pan. Add the chicken and fry on both sides until it is nicely browned. Remove the chicken and set aside. Fry the onions, bay and garlic in the same pot. When onion is soft and starting to brown, stir in the peanut butter. It will mix in nicely once it heats up. Add tomatoes water. Reduce heat and simmer for a few minutes. Return chicken to the pot. Add red pepper, salt, and pepper to taste. Simmer on low heat until the chicken is cooked. Serve with rice, mash or wedges. |

Thanks for all the recipe ideas people.
By the time I got to Morrisons I had gone off the idea of cooking so got pizza But I did get the ingredients to make the peanut chicken and the slow cooker one and will make them over the weekend at some point. I'll let you know what I think.

This is easy
Duck breast with Orange and Mango Sauce. Prick the skin side, season and dry fry at a high heat to release the fat. Brown the breast on both sides. Then chuck in the oven at 200C for 25-30 mins, depending on how well-done you like your duck. While this is cooking, melt 55g unsalted butter in a pan. Add 1/4 of a sliced/chopped mango (however big or small you like your mango bits), a splash of white wine vinegar, then crumble in a chicken stock cube. Add the juice from 1 orange and simmer for a few minutes, stirring now and again. Spoon some of the sauce over the duck breast. Serve with whatever you like. I've had brown rice, mashed potato or salad with it. |
