Last Nights Dinner : Sometimes I Amaze Myself

Now I have always enjoyed mucking about in the kitchen but the meal I made last night was 1 of the best ever .

I made chicken in BBQ sauce with tomatoes, mixed peppers, mushrooms & Spring onion.

Method

(1) Slice chicken breast into nice sized pieces.

(2) Place chicken in sealable bag with sachet of bbq sauce & marinade for 20 minutes & preheat oven to 180

(3) slice peppers, mushrooms, tomatoes & jumbo spring onion.

(4) Place marinaded chicken into pyrex dish & add sliced vegetables.

(5) Stir in mixed vegetables so they are covered by the bbq sauce and add salt & lots of cracked black pepper

(6) Place in oven for 45 minutes

This dish cameout f'ing gorgeous. The chicken cameout nice & tender & the black pepper in the sauce & on the vegetables cameout a treat.

Now all I need next time around is someone to cook it for .

I'm pretty handy in the kitchen having been doing it for a lot of years.

Tonight I made a BIG lasagne. As far as I can tell I did it exactly the same way I always do it - it's regular and favourite in my house.

But tonight it was absolutely delicious! The family have all asked me what I've done differently because they've enjoyed it so much. I have no clue what the difference was

Needless to say, I won't be able to replicate it again.

Good recipe. I might try that on Monday.

Well done for nonplussing not only the family, but also yourself.

Do you put a teaspoonful of honey in your lasagne mix? If not, I suggest you try it. It makes a real difference. Also, try sweating the onions before frying the meat. That also helps.

Anything with a lot of tomato in, I always add a couple of teaspoons of Splenda (diabetes cuts out honey and sugar etc). I never sweat the onions, just finely dice and chuck in after I've fried off the mince. The only thing I didn't do that I normally do, is drain the mince through a sieve to remove the fat.

I reckon that's what it is, because the flavour is in the fat, and there was just so little I didn't bother sieving.
