Green Pea & Egg Salad
I would like to try this, but which cheese should I use?
Green Pea & Hard-boiled Egg Salad This Pea and egg salad is slightly spicy with the addition of Cajun or Creole ingredients. 1 - 15 ounce can peas, drained 1/2 cup diced American cheese 1/2 cup diced onion 1/4 cup chopped black olives, and some halves for presentation 2 diced boiled eggs, discard yolks 1 boiled egg quartered lengthwise for garnish 1/2 to 1 cup mayonnaise (Start with 1/2 cup and increase as necessary) Salt, to taste 1/2 teaspoon paprika 1/2 teaspoon Cajun or Creole seasoning METHOD Mix all ingredients together. Let stand for a minimum of two hours in the refrigerator. Serve with crackers. |

American cheese is all made from pasteurised milk and is crap, IMO.
I'd be inclined to suggest Cheddar as a starting point, however, looking at the ingredients, probably grated Parmesan might be better as it has sweetness. Let us know how it goes. |
