I need to connect a device that offers S-Video and RGB Video outputs. Which of the two would offer better quality, RGB or S-Video?

Am I right to assume that the difference will be negliable on a standard TV screen anyhow, or is the quality difference more than just academic?

Even on a SD Tv,it is obvious what a difference RGB makes.

RGB is massively better, S-Video is just PAL with most of the PAL defects removed - it's just a B&W picture with a few lo-resolution coloured blobs smeared on top.

Just be aware that some TVs, especially the older and cheaper models, don't handle RGB well.

I had an old Goodmans CRT widescreen TV that was dreadful on RGB. The colours were all washed out and the image was shifted to the left. It was also impossible to switch between 16:9 and 4:3. Basically the image quality on S-Video was streets ahead.

But having upgraded to a LG LCD the opposite is true. RGB is way in front of S-Video and things like aspect ratio switching now work properly. So while I would agree that with the right equipment RGB is ahead of S-Video that may not apply in every case. A lot depends on the quality of the TV.
