What's the best way to store homemade bread?

My OH makes a lot of bread and freezes some of it and that's fine. It's the loaf that's going to sit overnight, he put the one he made yesterday into a plastic box (wouldn't have been my suggestion) and now it's a bit limp.

So does anyone have any suggestions of how to wrap it to keep it soft but crusty?

Probably greaseproof paper or a paper bag. Sealing it in plastic will not allow it to breath and creates moisture. Homemade bread always hardens by the next day anyway. This is where the French have it right. Fresh bread every day, sometimes twice a day!

I agree but the 'maestro' started to bake it at 7pm, we could have been having it nice and toasty this morning

It deteriorates continuously but I eat a loaf over about four days and it's fine. Using oil in the mix will also help it keep longer.


Make sure that before storing the bread you let it cool completely. You shouldn't lose texture when you store it if you do that as the moisture will have evaporated.

i keep my homemade irish soda bread wrapped in a tea towel and then place in a bread bin or a sealed plastic box.. it keeps for about 2 to 3 days

In Italy we tend to keep bread (homemade or not) in a paper bag in a wick basket inside a cupboard. This allows air to circulate but protect it from excessive humidity - these days in Milan we have around 70% of humidity and bread tend to go rubber no matter what you do, but in England it certainly is different.

I think the weather we're having just now isn't helping, I'm keeping our regular sliced loaf in the fridge as it's going off so quickly.

I always make sure my homemade bread is completely cooled before storing. Then I wrap it in tin foil and place it in the bread bin. Its always perfectly good to eat for 2 or 3 days.
