Huevos divorciados recipes?

Anyone have any?

I tried to make it. It can out okay. I used canned red tomatoes for the red salsa and fresh green tomatoes for the green salsa.

For the red salsa I add tomatoes, chilli powder, garlic, onions, and coriander. For the green salsa just the tomatoes with onion.

I fried some tortillas off so they became chilaquiles.

I am going to try it again to see how it comes out.

Oh yum! Did you know that they're called 'divorced eggs' because one egg is supposed to be a passionate, fiery one and the other a wildly jealous green egg? Ergo the divorce.

This is how we make the salsas in my house:

Red:
tomatoes
half an onion
A pinch of coriander
jalapeņo chilli to taste
salt, olive oil and lemon

Boil the tomatoes and the chilli without peeling and with the salt for about half an hour - 45 mins, then drain. Add the rest of the ingredients and blend, if it's too thick, add a little water to make it into a salsa, rather than a paste.

We buy the green one in mexico.

Serve with refried beans and voila!
