My Dad brought me back a garlic plait from France and I have no idea what to do with it all! I do cook with garlic a fair bit but there's no way I'll use it all before it goes bad.

Has anyone got any ideas of what I can do with it all?

I think it freezes ok and you could look into pickling maybe? I'd do some searching on preserving tips

Be very careful pickling garlic or keeping it in oil. It is very likely to cause food poisoning due to a reaction that happens within garlic if it is not exposed to the air (search on line for more info, in fact even on DS).

I only found out about this by chance (after using some homemade garlic oil !)

Forgot to say, you should find that garlic will last for ages anyway. Keep it hung up somewhere relatively cool and dry.

I bought a huge jar of pickled garlic in a market because it was so cheap, but never fancied using it, so in the end it went in the bin. A real false economy.

Garlic does keep for a long while, though what you could do is mince it up and then freeze it in an ice cube tray with water of course

Though what I do is plant it in a pot and grow some more with any I have left too long. Have some growing just now, from some garlic I had on the window sill for nearly 3 months.

You can freeze garlic bulbs without peeling them, and just remove cloves as required. Or peel and chop your garlic, and freeze wrapped tightly in clingfilm or use freezer bags. You can then just grate off the required amount.

Alternatively, you could use a blender to make a puree, using one part garlic to two parts oil, and freeze. This should remain soft enough to scrape off just what you need each time. (I don't know how long this would keep for in the freezer and have not yet tried it myself - so please find out if you do intend to try this!)

roast loads of veg and whole cloves of garlic.i put in at least 2 bulbs.if you are not veggie put sausages on top with lots of olive oil and herbs.
butternut squash,red onion,peppers,par boiled new pots,sweet pots,tomatos.
really good.actually put more garlic in.
we then use it in a french stick the following day.

I've kept it in the cupboard for months before, it remains perfectly usable.

I thought that, but i bought some from Tesco lately, and it only lasted about 2 months (if that). I noticed the other day that the use by was April ...... even though i had still used a few times since then (and im alive to tell the tale )

I dont use garlic much as my husband can eat a little, but if he has too much his mouth comes up in lumps and he cant stop sweating. So we only have it (a small amount) in a few selective dishes.
