Recipe help/inspiration please?

For today's dinner, I bought a lovely joint of slow matured beef (thank you Sainsburys), and must confess that I grabbed one off the shelf without really looking too hard at it - anyway, upon removing it from it packaging today, I realised that it was HUGE. I have roasted it, and it was beautiful - but, I have half left over.

I have a notion to use it tomorrow by making it into a pie of some sort - I have a slab of puff pastry in the freezer just begging for the job, and thought all I need to do is add some onions and maybe some mushrooms and a bit of gravy/sauce - and that is where I am drawing a blank; can anyone tell me what I would need, and how to make a nice gravy to reheat the beef in as well as cooking the other ingredients?

Recommendations gratefully received.

For a really tasty gravy, I use Bisto onion gravy granules, and then I add a good dollop of either Oyster sauce or Yellow bean sauce.

Fry off the onion and mushroom first, cut your beef into cubes,
fry off with onion/mushrom mixture, pile into pie dish, add gravy and cover with pastry, cook as per pastry instructions and then enjoy.

PS can I come to dinner please.

You can make a lovely gravy for beef out of mustard and Guiness.

The beef sounds yummie!

I would soften the onions (and maybe some finely chopped carrots or celery if you like them) Add the chopped beef to heat through and then add some beef or veg stock and maybe some red wine or beer. If you have gravy granules, these can thicken the stock otherwise you will need to add some flour and cook on the hob on low for about 30 mins.

If you are using jus-rol puff pastry then I would just make a pie-crust top rather than a filled pie as the bottom is always soggy.

Enjoy however you do it

That's pretty much how I would do it (I would also chuck in a bay leaf and a generous spoonful of whole peppercorns to the stock).

I've never tried using puff pastry for the base, just shortcrust and I've found that sprinkling a generous layer of flour in the bottom of the case before putting the filling in helps reduce/remove sogginess.

Thanks for the replies

I have to confess that I am a shameless cheat As we are in the midst of a whole lot of DIY, I didn't have a hell of a lot of time on my hands today, so I decided to cheat - I cut the beef into bitesize bits, into a casserole dish with some onion, mushrooms and a couple of cans of Oxtail soup , then into a slow/moderate oven for an hour or so.

I did the puff pastry on the side, and some potatoes roasted in goose fat - and to be fair, it was actually not too bad (certainly better than wasting that lovely beef)
