Soup - suggestions please
Having a wee bit of an economy drive in our house at the moment, so I was considering getting a chicken for Sunday or Monday to roast, and then boiling the carcass up to make a stock to make into soup the following day - anyone got any nice suggestions for a soup recipe to make with the stock?

could you get some butternut squash? I gently sweat peeled squash cut into chunks with some chopped onion and carrot, in a little olive oil (or butter) until softened.
Add some ground coriander & cumin, chilli flakes to your taste and cook for a few more minutes, stirring. Add your warm chicken stock and simmer until veggies are very soft. Whizz in a blender - or use stick blender straight in the pan. Adjust seasoning and serve with a dollop of cream or creme fraiche & some crusty bread. Good Autumn recipe - but this weather's like Autumn anyway

Chicken stock is always the base for all my soups unless I am cooking for vegetarians.
The choices are endless - at this time of year and because it's not quite autumn yet (or so I live in hope!) I would probably do something like a nice cream of tomato. On an economy drive it's dead cheap, wizz up some tinned toms with the stock, basil and a touch of both sugar and celery salt, add creme fraiche and there you have it. This is my favourite site for soup recipes. |

You can add whatever you have in the fridge/freezer/store cupboard - sometimes I add small pasta shapes/carrots/leeks/tiny meatballs/prawns - it is very light but also very filling and tasty. |

Cream of carrot soup and broccoli and stilton, or just a good old chicken broth with veg lentils and barley. Got some good recipes if you want them.

Ooooh, some nice ideas, thank you
- I particularly like the sound of the rice/peas/broad beans idea, not least because it sounds quick and easy. I also got sent some cracking recipes in a couple of PM's too, really glad I asked

steep some dried peas and barley over night
(for best results use a non-cooked carcuss) simmer the chicken carcuss with some knorr chicken powder after 2 hours add the peas and barley add crushed black pepper remove carcuss when peas and barley are near ready add sliced table celery add fresh carrots when celery is halve cooked add frying leeks (soup leeks have inferior taste) shortly after the carrots add in meat from the carcuss and flat leaf parsley season with salt and serve. |
