Tasty, but it went wrong!!
I was given a couple of rose veal escalopes today and decided that tonight I would push the boat out and have a delicious meal fit for anyone.
I bashed the hell out of one of them, flour, egg wash and breadcrumbed. The plan was to have with buttery garlic mash and sliced peppers. I boiled potatoes as normal, however when I came to mash them they weren't done, despite them breaking up in the pan. I continued on regardless thinking a few lumps wouldnt hurt. By this time the veal was in the pan sizzling away, and beginning to burn (my attention was on the potatoes)! Back to my potato problem, I went to add a little milk only to see it come out of the bottle in lumps!! It was only out of date yesterday! Anyway to cut a long story a bit short I microwaved/boiled some chopped potatoes and put garlic butter in with them and a little garlic butter on top of the rested veal, which by now was going incredibly cold and it wouldnt melt, along with the cold peppers. So although my dinner was still nice, it wasnt quite as good as i was anticipating. Anyone else had a dinner go awry because of one stupid thing? |

we make schnitzels from veal (basically what you did with them, bashed, flour, egg, breadcrumbs and then you fry them) occasionally or mainly pork. When we do make them we always make extra and put the left overs in the fridge for the next day and have them with salad as they are just as nice cold as they are hot.
So while you may feel your dinner went wrong I am actually quite envious.

..as for mash, the more their boiled or steamed the better.
It's not easy timing everything on time. Some potatoes, like the current crop of British Queens, can go into mush very quickly if you overcook them. You get them right, they're top notch. I've have a few miss-haps myself, but my biggest was at Christmas when I lot the turkey cook into a sinder (tough as oul boots, it was) |

Maybe you could make the mash in advance and then reheat it when the veal is nearly ready

Well people say if at first you dont succeed try again.....I did and it was fab!
Put a bit of extra seasoning into the flour and breadcrumbs. absolutely gorgeous. The garlicky mash was perfect, if not a little too much. I had some mange tout, green beans and carrots to accompany. I also added a little garlic butter to the oil/butter I had cooked the veal in, then spooned over a little once it had foamed. All in all, Im a very happy bunny with tonights dinner!! |
