Tried & tested Korma sauce
Anyone know of a good tried & tested chicken korma.
Finally got daughter to dip into a take away of mine. She loves Korma sauce & naan bread. I have the chicken and I have the naan (Pataks do a FANTASTIC frozen square naan)but would like a really sweet, creamy Korma sauce recipe not any of the mixes because I haven't tasted a decent one yet. ![]() More of a madras gal myself but Korma is nice every now & then. ![]() (Also has anyone tried those curry spice packs you get off ebay with all the dried spice mix & recipe; are they any good?). |

I usually fry a red onion, a green pepper to mix in with it and use skinless chicken thighs. The family reckon its the most authentic other than making one from scratch |

Pataks paste never fails me. You can get it for loads of different curries and it has all the right spices/amounts mixed in. Never had the korma mix but can highly recomend the madras.
The fact it comes in a jar is off-putting at first but you use fresh onions, tinned or fresh tomatos etc and all the paste does is provide the spices without spending ages adding them seperatly. |

Try making your own. I do a Lamb Keema but you can use the same recipe for chicken korma.
3 or 4 chicken breasts chopped 1 onion diced 2 garlic cloves finely chopped 4 fresh tomatoes chopped 1/2 tin coconut milk 1 to 2 teaspoons Pakat mild curry paste or Korma paste. Fried chicken for around 10 mins, drain any liquid off, add onions & garlic & fry gently, add tomatoes, curry paste & finally coconut milk & cook gently for 15 to 20 nimutes & serve. |

In fact the whole site has some good looking recipes, I'm going to try the naan and pilau rice recipes today with a fish curry I think (or maybe pork, undecided as yet!) |
