Simple, tasty Salads
I must tell you about a really gorgeous yet stunningly simple chicken salad I bought yesterday.
Cold Chicken pieces sweetcorn finely diced red and green peppers marinated in diluted honey, (diluted with water). No salt or pepper and it was beautiful. Pasta could accompany it. Has anyone got ideas for tasty, yet surprisingly simple salads? |

I tend to go for the simple and I don't buy leafy salady bits.....
So it's chopped tomato, cucumber, celery and olives in a bowl, mix in some chilli sauce and olive oil..........bung it on the plate. I've had that tonight with chicken breast............ |

This might not be to everyone's taste but a cabbage salad (white or red - finely shredded) with garlic, parsley, balsamic and wholegrain mustard is amazing! It's got a strong flavour that mightn't be everyone's thing but it goes amazingly with any kind of tandoori meat dish, rice etc...

Slight adjustment to make from my initial post:
'Cold Chicken pieces sweetcorn finely diced red and green peppers marinated in diluted honey, (diluted with water).' The sauce was translucent, had a slight taste of honey without being overpowering, yet it smothered all ingrediants elegantly. Does anyone know how to dilute honey, while still retaining the sticky translucent sauce? |
