Simple, tasty Salads

I must tell you about a really gorgeous yet stunningly simple chicken salad I bought yesterday.

Cold Chicken pieces
sweetcorn
finely diced red and green peppers
marinated in diluted honey, (diluted with water).

No salt or pepper and it was beautiful. Pasta could accompany it.

Has anyone got ideas for tasty, yet surprisingly simple salads?

TARRAGON CHICKEN SALAD

2 diced cooked chicken breasts
1 small apple, cored and diced
1 stick diced celery
half a diced red onion
2 tablespoons mayonnaise
1 tablespoon fresh lemon juice
2 tablespoons chopped fresh tarragon leaves
1 tablespoon chopped fresh parsley leaves
1 tablespoon chopped fresh chives
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
handful lightly salted, roasted cashews, roughly chopped
bag of rocket salad washed and dried
Olive oil, for dressing rocket

Combine the chicken, apple, celery, and onions in a medium bowl. In a small bowl, combine the mayonnaise, lemon juice, tarragon, parsley, chives, salt and pepper. Pour dressing over the chicken mixture and stir to combine. Refrigerate for at least 1 hour. Just before serving, lightly dress rocket with olive oil. Serve chicken salad on a bed of rocket and top with cashews.
(chop and change to suit your own taste) Serves approx 2 for main 4 for starter portion

I tend to go for the simple and I don't buy leafy salady bits.....

So it's chopped tomato, cucumber, celery and olives in a bowl, mix in some chilli sauce and olive oil..........bung it on the plate.

I've had that tonight with chicken breast............

This might not be to everyone's taste but a cabbage salad (white or red - finely shredded) with garlic, parsley, balsamic and wholegrain mustard is amazing! It's got a strong flavour that mightn't be everyone's thing but it goes amazingly with any kind of tandoori meat dish, rice etc...

Slight adjustment to make from my initial post:

The sauce was translucent, had a slight taste of honey without being overpowering, yet it smothered all ingrediants elegantly.

Does anyone know how to dilute honey, while still retaining the sticky translucent sauce?

That sounds delicious!!

I'm really tired of lettuce etc., so will give that a go.
