I have when I was visiting relatives in Plymouth and my husband did say to me I wouldn't like them - I cannot describe the taste except I didn't like them. They are a rare sight up here and I had never heard of them before.........that was 1987 and the taste has never gone!

Only faggots I see are in the frozen bit in some shops.........I think, I might be wrong, an English thing. Not a Scottish thing, we have haggis! |

Faggot recipe
1/2 lb liver (pig or lamb, pref pig) 1/2 lb belly pork (no bones) 1 small loaf of wholemeal bread 1 large or 2 medium strong onions 1 medium cooking apple salt & pepper to taste dry sage, 1 teaspoon yolk of one egg 1 pint of stong beef stock (3 oxos as example) Method: In a food processor (sharp blade), mince the onions to fine, and xfer to a large mixing bowl. Reduce the bread to breadcrumbs in the processor, add to bowl. Peel and chop the apple, blitz in the food processor Add the belly pork and blitz Add the liver and blitz (note, in this order, the blitzed pig liver smells less awful - on its own, you'll heave...) Xfer to the mixing bowl salt and pepper (plenty!) add sage add yolk of an egg, fork thru the mixture Mix all contents thru with your hands, add 1/3rd pint of stock, mix thru again. Heat oven to gas 4, or 190C (ish) Grease a deep oven tray. make the mixture into approx 9 to 12 balls, and press together in the tray (9 or 12, whatever). place into oven for 10 mins (this drys and sets them) after 10 mins, remove, and run a sharp knife thru the faggots, to the bottom of the tray - helps separation later. Pour over 1/3rd pint of the stock. back into oven for 1 hour. remove and pour over last 1/3rd pint of stock/gravy. back into oven for 15 minutes. The precise proportions of meat etc don't matter that much, but too much salt (esp) or herbs is bad news. Its a bit of trial and error. Make sure you have decent breadcrumbs, the egg and the apple. The apple is the secret here. |

I have had them before, when i was very small. I remember mum serving them up on spaghetti, and i didnt like them. They were peppery. Never had them since, and never will. |

Our local butcher sells them which means I have to make the gravy, but that's no hardship. They often used to be a Thursday food in our house when I was growing up - cheap meat the day before payday. |

The last time I was in Wolverhampton a pub I was in had some on the menu. They were served with black peas, which I believe are a Wolves speciality and I've got to say it was a geeeeeeenius plate of grub.
Whe I got home I tried some frozen Brains' faggots and they were nothing like what I'd had in Wolverhampton. It would be like comparing a whole box of Thornton Continental chocolates to a single wine gum No comparison. |
